‘It’s a dream come true’: Business booming for Peterborough cafe after hugely successful first year
Pancakery was opened by Amber Stewart in June 2025
The owner of a Peterborough cafe has described its first year of trading as a “dream come true” after welcoming thousands of customers since it opened last summer.
Pancakery, in the Rivergate Shopping Centre, was opened by Amber Stewart in June 2025 and has quickly become one of the most popular cafes in the city centre.
Specialising in fresh pancakes made to order, the business was recently named by Peterborough Telegraph readers as one of the city’s top 10 independent cafes.

Despite being open little over 12 months, Pancakery boasts an impressive average 4.8/5 Google rating.
Speaking to the Peterborough Telegraph about a hugely successful first year of trading, Amber said: “It’s been going fantastically and I honestly couldn’t have wished for better.
“It’s a dream come true to do what I love and for it to go so well. The team is fantastic and we’ve got amazing regular customers.
“The feedback from customers has been overwhelmingly great. We’ve got a really solid set of regulars who come in all the time, and it’s that repeat custom that shows we’re doing something right.

Offering scrumptious toppings such as Nutella, Lotus Biscoff and Oreo cookies, the cafe has fast become a haven for the city’s pancake lovers.
Amber’s initial idea for opening the business stemmed from noticing a gap in Peterborough’s foodie scene.
“We’ve got a few big chains in Peterborough and what they do is quite different to us,” she said.
“Everything is made from scratch, and that quality speaks for itself. Customers notice the difference there.”
