Some tasty ideas to get you ready for Veganuary

With the number of people participating in Veganuary increasing every year, 2021 just days away and most restaurants closed, here are some ideas to try at home.

Available in most Peterborough supermarkets, the Goodlife range is nutritionally balanced, the different products just make naturally good, delicious veg do their thing, with no artificial colourings, flavourings, additives, or preservatives. Here are a couple of ideas to get you started.

Falafel Wrap

Ingredients

Goodlife Falafels

Multi seeded wrap or wrap of your choice

Carrot – cut into julienne strips

Lettuce

Red Cabbage – sliced

Red Onion

Cucumber

Houmous

Serving Suggestion: Dip into rich mayonnaise

Method

Pre heat oven to 200ºC / Fan 180ºC / Gas 6. Place three Goodlife Falafels onto an oiled baking tray in the centre of the oven and cook for 15 minutes. While the Goodlife Falafels are cooling, peel a carrot and using a julienne peeler, slice into julienne strips. Cut a cucumber into half, julienne the cucumber in the same manner. Cut slices of red cabbage and red onion. Lay the wrap on a chopping board, spread the wrap with houmous, add a thin layer of julienne carrots, julienne cucumber, red onion and red cabbage. Take the cooked Goodlife Falafels and put them the middle of the wrap, fold the lower edge of the wrap up, then fold the 2 side edges around. With the wrap folded, then cut the wrap in half and enjoy.

Spicy Veg Bean Burger

Ingredients

Goodlife Spicy Veg Bean Burgers

Brioche Buns

Mixed Salad Leaves

Tomato – sliced

Red Onion – sliced

Serving Suggestion: Chips and Chutney

Method

Pre heat oven to 200°C / Fan 180°C / Gas 6. Place the Spicy Veg Bean Burgers onto a baking tray in the centre of the oven for 22-25 minutes. While they’re cooking, slice the brioche buns and add a thin layer of lettuce to the base of the buns along with the thin slices of tomato, then add the cooked Goodlife Spicy Veg Bean Burgers. Pop a few slices of red onion on the top of the burgers and add the top of the buns.

Vegetable Protein Balls & Pasta

Ingredients

Goodlife Vegetable Protein Balls

Tagliatelle Pasta (or another pasta of your choice)

Jar of Tomato Pasta Sauce

Salad Garnish

Serving Suggestion: Great served with fresh olives and crusty bread.

Method

Place the Goodlife Vegetable Protein Balls on a baking tray in the centre of a pre-heated oven set at 200ºC / Fan 180ºC / Gas mark 6 for approx. 12-13 minutes. Turn once, half way through cooking. While the Goodlife Vegetable Protein Balls are cooking boil some tagliatelle according to the cooking instructions on the pack. When the pasta is cooked, add a jar of tomato pasta sauce and warm through in the saucepan, according to pack instructions. When the Goodlife Vegetable Protein Balls are cooked through, add the cooked pasta and sauce to two bowls, top with a few of the protein balls and add a side salad garnish of your choice.

Ingredients

Goodlife Falafels

Wholemeal Pitta breads

Tofu Halloumi Cheese

Cooking Oil

Red Onion – Sliced thinly

Lambs Lettuce

Pomegranate Seeds

Serving Suggestion: To make your Goodlife Falafel Mezze extra tasty, serve with houmous, olives, sundried tomatoes and roasted vegetables of your choice.

Method

Pre heat oven to 200ºC / Fan 180ºC / Gas 6. Place the Goodlife Falafels onto an oiled baking tray in the centre of the oven and cook for 15 minutes.While the Goodlife Falafels are cooking, open your pack of Halloumi and carefully cut the cheese into 3 or 4 slices. Take a griddle pan and spray lightly with cooking oil of your choice and fry the halloumi slices for a few minutes on each side. Once cooked, place to one side.Take your pitta bread and toast lightly. Once toasted, cut into thin wedges. Serve the cooked Goodlife Falafels, grilled halloumi with a few slices of red onion, lettuce and a scattering of pomegranate seeds.
