Peterborough students strike bronze at food and drink challenge

Three hospitality students from Peterborough Regional College travelled to the Excel in London last week to compete in the finals of the Country Range Student Chef Team Challenge.

Robert Manterfield (Level 3 Professional Chef), Joel Barton (Level 3 Professional Chef) and Chester Briddon (Level 3 Food and Beverage Supervision) - regional heat winners in January - competed with nine other colleges and came away with a creditable Bronze award.

The trio’s menu consisted of poached plaice fillets with a sauteed mushroom medley, panfriend banana and a light coconut and Thai curry sauce; pork three ways - roasted pork loin, butternut squash puree, pork rosemary ragout with cheese mashed potato with a crispy pork faggot enriched with a light mulled cider jus and beetroot fondant; deconstructed lemon tart with chocolate and vanilla tuille set lemon custard, lime gel, chocolate and raspberries decorated with edible flowers.
