Peterborough hospital staff stunned by delivery of huge rainbow cake

A local baker has dazzled hospital staff with an amazing rainbow cake delivered to Peterborough City Hospital.

Carol Smith, who runs Cakes by Carol in Stilton, usually works on wedding cakes but wanted to do something special with some of her supplies which were due to go off.

As Carol pre-buys her ingredients, and with weddings being postponed, she didn’t want anything to go to waste, so making a cake for the hospital to show her appreciation was the perfect solution.

The whopping cake made a huge impression on hospital staff as they flocked to see it. As the “biggest cake she’d ever done,” Carol spent 40 hours creating the vanilla masterpiece, using 90 eggs in the 55kg of ingredients.

Delivering the cake on Saturday, Carol worked into the early hours of the morning making sure it was just right. She said: “I used every single piece of cake I baked, I thought it was never going to end. It got to 12.30am, so I asked for my husband to help me with some of the final touches.”

As the cake arrived, carried by her husband and son, some staff said ‘it was like having a celebrity in the building’ as people flocked to take photos. The cake was given to the Critical Care Unit and was split into 350 portions which made their way across a number of wards.

Carol was so pleased that everyone loved it. She said: “A lot of nurses said it made their day. I wanted it to put a smile on their faces in difficult times. It’s my bright colourful thank you to them. Just to see their smiles when they saw it was amazing.”
