The team behind Inari Sushi And Grill on Broadway in the city centre had just taken the lease and were getting ready for a launch when the hospitality trade was shut down by the coronavirus pandemic.

They spent lockdown doing takeaways and deliveries, but stopped almost three weeks ago for a complete refit.

With work pretty much complete, the restaurant - bringing Japanese fusion Yakitori and sushi to Peterborough - will finally welcome guests on Tuesday.

They will be greeted by long bar, stylish chairs and tables - plus a small chef’s table next to the robata charcoal grill - which will cater for 30-plus diners, with plans for seating outside inline with the council’s al fresco dining plan.

The team behind the venture have extensive experience working in Japanese restaurants across Europe and in London and say they have added their own twists and flavours to dishes to bring something new and exciting to the city.

“We had just started getting going when the lockdown came,” said executive chef Regimantas Trimakas. “We have used our time doing deliveries but the restaurant is all about being a dine-in experience. Something new and different in Peterborough.”
