New look Haycock to reopen in June after multi-million pound renovation

Following extensive restoration of the magnificent Grade II listed building, the renamed Haycock Manor Hotel is set to launch on June 22.

The first phase of the opening will see its refurbished 49 bedrooms unveiled alongside two restaurants - headed up by well known Peterborough chef Lee Clarke - and bar and lounge.

Signalling its serious intentions to make a mark on the region, Haycock Manor Hotel will launch as a member of the prestigious consortiums Preferred Hotels & Resorts L.V.X. Collection and Pride of Britain.

The property has a remarkable history dating back to 1571, and the latest iteration is full of character but pays due respect to the hotel’s incredible past. The restoration has brought to life the historic fabric of the building and focused on creating individual bedrooms and public spaces that are both elegant and playful.

The owners, Haycock Limited, who only took over in January last year, describe the process as bringing heart and soul back to the property.

The bedrooms are divided into clusters with classic doubles, garden classics, feature rooms, junior suites or master suites. Each has its own identity, but it is in the feature rooms and suites that the hotel’s history has been brought to life – beams have been exposed, Elizabethan fireplaces and walls restored complimented by luxurious roll-top baths, four-posted beds, statement tiles and colour schemes, as well as state-of-the-art technology.

Food will also play a big part of what the Haycock Manor has to offer and new Executive Chef is Lee, who moved his highly regarded Prévost fine dining restaurant to the Haycock just after the takeover - and weeks before first lockdown.

Lee will oversee all elements of the food and beverage including breakfast, afternoon tea and the more casual dining restaurant Haycock Kitchen, which will serve a brasserie-style menu featuring seasonal grills and salads in the historic original inn dating from 1534.

However, Lee’s main focus will be Prévost. Recognised by Michelin and all the major restaurant guides, Prévost was for four years located in Priestgate in Peterborough city centre, but from June will be housed in an Orangery style building with glass atrium overlooking the Haycock’s spectacular kitchen gardens.

Joining Lee in the kitchen at Prévost is Sam Nash, who has spent the last six years garnering his skills at L’Enclume.

The restaurant will feature a large garden terrace overlooking the village high street.

Afternoon tea will be served in one of the hotel’s distinctive drawing rooms, complete with open fireplace and exposed beams and the Cocktail Bar will showcase the very best of British, new and old-world wines,

with a strong focus on sustainable, organic producers.

The hotel - which will open with 120 staff onboard - is now taking bookings from June 22 for accommodation and reservations at Prévost@Haycock and Haycock Kitchen.
