Peterborough to get its first zero-waste deli
A deli with a difference is about to add to what is on offer at Peterborough City Market as it celebrates Organic September.
Be Kind Kitchen is a whole food plant based zero-waste deli using seasonal locally-sourced organic products where possible.

Founder Angelique Williams (pictured) said: “Our goal is to show that eating a plant-based diet is easy to follow with nutritionally balanced meals that don’t cost the earth.
“We understand that everyone’s tastes differ, so we use a simple ‘red, amber, green’ labelling system to denote foods that are totally wholefood plant-based (wfpb), partially wfpb, or simply vegan which means it can contain oil and refined sugar. Most of our products are gluten-free where possible.”

Organic September is a month-long celebration by The Soil Association of all things organic.
Angelique aims for the stall, due to open at the start of October, to become the first recognised zero-waste business in Peterborough. Customers will be invited to bring their own containers and get discounts and incentives for doing so.
Angelique said: “We offer a buy-to-try where the majority of our ingredients that we use in-store are available in bulk containers to customers to buy per weight where we offer per teaspoon, per tablespoon and per 100g. Customers can choose a variety of recipe ideas and assemble most of their ingredients in-store without having to buy in bulk, thus reducing packaging and waste.”
Food available will include black bean burgers, no bull burgers, and okara fishless fishcake burgers; three-bean bunny chow (chilli in a gluten-free bun); bird of paradise hoisin style wraps, salads and pastrami-style sandwiches, salmon and cream cheese on a gluten-free bagel.

Sweets will include cheesecakes, carrot cake, cookies, bloc (protein bars), South African fudge, toffee and chocolates.
Angelique added: “We also make our own fresh tofu and our signature product is Viltong - the vegan version of South African Biltong which is already popular with our local following. We are passionate about the environment, animal welfare, human health and we want to encourage a community of kindness.”
