A smart new food bar, offering diners “your salad, your way”, has opened in Peterborough city centre.
Daniel Evans, whop opened Green Bay Salads on Midgate, last Thursday, said he was really conscious about flexibility of choice when preparing his blackboard menu, which offers takeaway or eat-in diners a pretty free reign.
“Nothing is pre-prepped, pre-packed or dressed,” he said. “We want our customers to choose what they want and how they want it.
“Too often people buy pre-prepared food, open it and throw away one thing or another that they don’t like. That is just a waste.”
Green Bay allows customers to select as many, or as little, of the salad and partner options and then choose a deli item and finish of with their own choice of dressing or oil.
After 25 years in finance, the salad bar venture is a new beginning for Daniel, who says he has always had a passion for food.
“I was in a position where I wanted to do something different, and this is something I love and enjoy,” he added.
“The feedback so far has been really good and already we have have seen 10 or 15 customers come back three or four times.
“To be honest I was really confident that what we were offering would go really well, but when you open something new you don’t know what or who to expect.
“I have a good team in place and am looking forward providing a fresh, healthy lunchtime option for city centre workers and shoppers.”
Green Bay Salads opens at 7.30am for breakfast with a selection of fruits, juices and granola available.
