A couple who have spent the last 13 years building up business at the Stilton Cheese pub in Stilton are set to call it a day.
Sue and Carlos Rosa took over the 18th century inn in 2012 and have developed quite a reputation amongst fish lovers for their interesting menus. But they are now looking to retire, due to Carlos’s health, and have put the place on the market.
Sue said: “ We will be very sad to leave, we have had some good times here. Whoever takes over will be very lucky indeed. It took us a few years to really get things going, but it has been brilliant - it is a great village with great people and the staff have been excellent, most have been with us for 10 years or more.”
So as not to clash with the fine dining at the Bell, or pub food at the Talbot, Carlos used his Portuguese heritage and skills in the kitchen to establish the Cheese’s own USP - fish.
“We tried it and people liked it,” said Sue. “We have had all sorts on the menu over the years - weird and wonderful dishes - and people have come from all over to eat here.”
