We all know we 'should' eat our vegetables, but how many of us really get enough in our everyday diet?

We all know we 'should' eat our vegetables, but how many of us really get enough in our everyday diet?Whether it's down to taste, convenience or any other reason they are often lacking.

Here I'm going to briefly remind you of the benefits of eating your veggies before they take centre stage in a delicious curry recipe – what's not to love?!!

The nutritional highlights:

Vegetables are low in fat and calories, a good source of dietary fibre and provide us with extra energy. All these features help control weight effectively.

The presence of many vitamins and other chemicals in vegetables supply the body with nutrients necessary to boost energy production within the muscle cells.

Low in sodium, high in potassium, which helps combat water retention and protects your heart.

Recipe

Vegetable curry

Serves 2

Ingredients

1tbsp olive oil

1 medium onion diced

200g butternut squash peeled and diced

1 small white potato peeled and diced

1 medium carrot diced

80g frozen peas

100g broccoli florets cut small

400g tinned tomatoes

1tsp vegetable bouillon dissolved in 300 ml boiling water

2tsp madras curry powder (or to taste)

200g pot Natural yoghurt

25g desiccated coconut

25g ground almonds

Method

Add the olive oil to a medium sized saucepan and heat for 1-2 minutes before adding the onion. Fry onion for 5-10 minutes until it starts to soften.

Add the curry powder and cook for 1-2 minutes before adding the remaining vegetables and tinned tomatoes.

Add the vegetable bouillon to the pan, stir and then partially cover the saucepan with a lid leaving the mix to simmer for 25 minutes until it has thickened.

Mix the yoghurt, ground almonds and coconut in a separate bowl and add to the curry just before serving.

Serve with brown rice, quinoa or millet and chopped coriander to garnish.
