Rich in B vitamins especially vitamin B12, which is often lacking in vegan/vegetarian diets. Lack of B12 can cause symptoms such as weakness, memory loss, anaemia and digestive disorders
Contains 52 per cent protein and essential amino acids
In also contains additional functional and beneficial components such as beta-1,3 glucan, trehalose, mannan and glutathione. Studies have show that these components have potential health benefits such as improved immune response, reduction of cholesterol, and anti-cancer properties.
Where to buy
You will usually only find this in health food shops or via the internet. Nutritional yeast is not the same as brewer's yeast, so be sure to buy the right product.
Recipe
Macadamia nut cheese
Macadamia nuts have a high fat content, but don't be fooled into thinking they will stack on the pounds. In fact they have been shown to have a metabolism boosting effect.
Ingredients
130g macadamia nuts
2tbsp lemon juice
4tbsp water
1tbsp nutritional yeast*
Pinch salt
Method
Place the macadamia nuts in a coffee/spice mill and blend to form crumbs. Add the macadamia nuts to a food processor along with all other ingredients and blend until smooth.
Serving suggestions
Spread on rye or sprouted wheat bread or use as dip for raw vegetables. You could even make lettuce wraps by spreading the nut cheese onto big whole leaves of cos lettuce and topping with tomato – now there's a healthy cheese and tomato wrap!
The brand of nutritional yeast I use is by Marigold and you can usually find this in the Peterborough Health Food Centre, Westgate Arcade.
