Why I love watercress. Watercress has a really peppery taste that is balanced by adding things like orange in a salad and a fruity/acidic dressing.It also works really well as a pesto (see recipe).

The nutritional highlights:

Watercress is a great source of vitamins, minerals and phytochemicals.

Folate (or folic acid) – a type of B vitamin needed to form new cells.

It reduces the risk of spina bifida during pregnancy and works with vitamin B12 to help keep the circulation healthy

Potassium – An essential mineral, which helps regulate our blood pressure and nerve muscle functions.

Magnesium – Works with calcium to maintain healthy bones, it helps release energy from food and to absorb nutrients, as well as regulating mood, nerve and muscle function.

Lutein and Zeaxanthin – Types of carotenoids that act as antioxidants, meaning they can mop up potentially damaging free radicals.

Where to buy

Available in all supermarkets, however it has a pretty short shelf life so choose a bag that has the most life and doesn't look too wet.

Watercress pesto

Ingredients

60g pine nuts

60g watercress

2tbsp olive oil

2tbsp lemon juice

I fresh garlic clove crushed or 2tsp garlic puree

Pinch Himalayan rock salt*

Method

Place pine nuts in a coffee/spice mill and blend

Add the pine nuts plus all other ingredients to your food processor and blend until you have a smooth paste.

Serving suggestions

You can use this as a dressing for roasted vegetables, chicken, buckwheat pasta or a big salad.

* Himalayan rock salt can be purchased from www.detoxyourworld.com
