PEP Giuliano might hail from Sicily, but he learnt how to cook here in Peterborough.He said: "I came here with my parents when I was 11, and when I was a teenager I got a part time job working in Fratelli Tavola Calda, in Rivergate, and started making salads and sweets, but then my bosses taught me how to make the more complicated dishes."

He is now head chef at the restaurant, and agreed to take part in the Taste of Peterborough project because he knows that food can bring people together.

He said: "Peterborough is changing all the time, with people from all over the world living here, and if they can get together and eat each other's food, and realise that it's nice, then that helps them to get to know each other, and understand each other."

Pep said Sicilian food is quite spicy, but very tasty, and he goes back to his home country at least once a year to sample it. "There are some very good places to eat in Peterborough," he added. "But I would like to see more night-time opening. In Italy you can go out at night and have a bite to eat and an ice cream, but that doesn't happen here. I think that will change in time, though."

Pollo Parolaccia

by Pep Giuliano, Fratelli Tavola Calda, Rivergate.

Ingredients:

Three chicken breasts

One onion

Two peppers

100g olives

100ml marsala – enough to cover chicken

Three or four tblsp double cream

Two ladlefuls of tomato sauce

Half a kg of pasta

Quarter of a pint vegetable stock

One tblsp olive oil

Handful of parmesan cheese (optional)

Black pepper to taste

Method:

Cut chicken breasts into strips and place them in frying pan with sliced onions, sliced peppers and a tablespoon of olive oil.

Gently fry until onions soften.

Add marsala and a quarter of a pint of fresh vegetable stock.

Allow time to reduce and then double cream, tomato sauce, olives.

Cook the pasta in boiling water for five minutes.

Drain pasta and serve on warm serving plate, arrange cooked Pollo mixture.

Garnish with freshly grated parmesan cheese and freshly milled black pepper.
