Seasonal recipe from Peter Knighton: Beetroot Haters’ Soup

The free Riverford recipe iPhone app is here, with over 770 searchable recipes inspired by the veg you’ll find in our delicious organic veg boxes. The recipes have been reviewed by our customers to make sure they pass the all important taste test.

The idea is to help customers make best use of the items they receive each week – including some of the more unusual varieties of veg. The app is specifically designed to identify which types of veg go best together with our ‘veg machine’ - a slot machine style reel where you tell the app which items are in your fridge, for example you might have leeks and broad beans, or butternut squash and tomatoes. When you click ‘results’ you’ll be taken through to a list of recipes that match the vegetables you have.

Alternatively, you can search or scroll through all the recipes searching by ingredient, cuisine, season or eating occasion. You can store recipes for next time by adding them to your favourites.

The app also helps you identify varieties of veg and offers hints and tips on storage and preparation.

Beetroot Haters’ Soup

Serves 4

Ingredients:

l 2 tbsp olive oil

l 1 onion, chopped

l 1 potato, peeled and diced

l 2.5cm piece of fresh ginger, grated or finely chopped

l grated zest of 1 orange, plus extra to serve (optional)

l juice of 2 oranges

l 3 medium beetroots, cooked and cut into small dice

l 1.2 litres water

l sea salt and freshly ground black pepper

l a little cream or yoghurt, to serve (optional)

Heat the oil in a large pan, add the onion and fry until soft but not coloured. Add the potato and ginger and fry for 3 minutes. Add the orange zest and juice, plus the beetroot and water, then bring to the boil and simmer for 20 minutes, until the potato is tender. Blend until smooth. Reheat gently and season to taste.

Serve garnished, if you like, with a swirl of cream or yoghurt and a little grated orange zest.
